Anna Jones is a wonderful cookery writer and her books are well worth buying. Try this and you won't look back. I make it constantly.
2 leeks
50g coconut oil
1 kg sweet potatoes (pre peeled weight)
thumb size piece of fresh ginger
1 chicken stock cube (or 1 good tsp of Thermomix vegetable stock paste)
1 Tablespoon soy sauce
1 Tablespoon maple syrup
1 Tablespoon peanut butter
zest and juice of 1 lime
garnish with caramelised red onion slices
Method
Cut the leeks into 3cm chunks, and place in the thermomix with the coconut oil, chop 3 secs, speed 5.
Cook 5 mins, 100°, speed 1 (take down to slower speed if the noise is annoying)
Meanwhile peel and cut the sweet potatoes into 3cm chunks
add the sweet potato to the leeks with the ginger (sliced) the stock cube/paste, plenty of salt and pepper, and fill the Thermomix jug up to nearly the maximum mark with water.
Cook 25 minutes, 100°, speed 2.
Then add the soy sauce, peanut butter, maple syrup , lime juice and zest.
Blend for 1 minute speed 10.
